Berry ice cream!

Vanilla, nut, chocolate, chocolate-chip, mint, coffee/mocha, strawberry or simply berry ice creams are always welcome. Iced cream as it was first called is the world's favorite frozen dessert.

The term berry, in common English and in cuisine, refers to any small, edible fruit with multiple seeds; in this sense, the strawberry is a berry and the tomato is not. Aggregate fruits such as the blackberry, the raspberry, and the boysenberry are also berries in this sense, but not botanically. Berries as fruits tend to be small, sweet, juicy, and of a bright color contrasting with their background to make them more attractive to animals that eat them, thus dispersing the seeds of the plant. On the other hand, grape, currant, cranberry, blueberry and gooseberry are berries... Here's a simple recipe to make a delicious berry iced cream-
Berry Ice cream:

Ingredients:
3 tbs Cornstarch
6 c Milk
2 2/3 c Sugar (see note)
4 Eggs
3/4 ts Salt
13 oz Evaporated milk
2 c Whipped cream
2 c Crushed fresh berries
1 3/4 tbs Vanilla

Procedure:

Mix cornstarch with 1/2 cup milk until smooth.
Add additional 1 1/2 cups milk and cook over very low heat until thick and smooth, stirring constantly to avoid lumps.
Blend sugar, eggs, salt and evaporated milk in electric mixer bowl.
Add hot cornstarch mixture and beat well. Add whipped cream, remaining 4 cups milk, berries and vanilla.
Pour into gallon electric or hand-crank freezer.
Churn and freeze according to manufacturer's directions until firm, then carefully remove paddle.
Seal ice cream container well.
Fill ice cream freezer to top with crushed ice and ice cream salt.
Cover freezer tightly and set aside several hours to let ice cream season. Or spoon ice cream into another container which has been chilled and store in home freezer to season.
Note-It may be necessary to increase amount of sugar slightly depending on sweetness of berries.

Who said one cannot create happiness? Eating ice cream generates a happy feeling and those who make them are God, well not really but somewhat. The stress of everyday life that eats up all our joy and forces us to succumb to the pressure simply melts away with the tongue's contact with an iced cream... When one licks the ice cream there is one brief moment when all sins in life seem okay and everything else feels futile. All that matters is that beautiful, tranquil feeling thats sets within you... Ice creams are not religious or medicinal by nature yet they cure most of our maladies. Our blind faith in them shall never fail be it chocolate, vanilla or berry!
